The Current Situation and Trends of the Development of Pre-made Food Industry in Hunan Province

摘要 预制菜产业作为传统食品工业的升级和创新,因其便利、快捷性,满足了“烹饪小白”和“厨房懒人”的需求,成为餐饮行业的新风口。预制菜产业作为实施乡村产业振兴的有力抓手,有效链接一二三产业,还推动着农业、农村的发展。文章从湖南各地市湘菜预制菜产业发展现状入手,介绍了各地市食材资源、饮食特色、预制菜园区构建、企业典型做法、发展成果等,并从企业差异化发展,B、C两端双轮驱动,深化全产业链上中下游协作,预制菜产业园“集群效应”四个方面对湘菜预制菜发展趋势做了阐述,以期为预制菜产业的高质量发展提供一定的参考。 The pre-made food industry,as an upgrade and innovation of the traditional food industry,has become a new trend in the catering industry due to its convenience and speed,meeting the needs of“cooking professionals”and“kitchen lazy people”.The pre-made food industry,as a powerful lever for implementing the revitalization of rural industries,effectively links the primary,secondary,and tertiary industries,and also promotes the development of agriculture and rural areas.This article starts with the current development status of Hunan's pre made food industry in various cities,and introduces the food resources,dietary characteristics,construction of pre-made food parks,typical enterprise practices,and development achievements of various cities.And elaborate the development trend of Hunan cuisine's pre-made food industry from four aspects:differentiated development of enterprises,dual wheel drive at both ends of B and C,deepening cooperation between the upstream,midstream,and downstream of the entire industrial chain,and the“cluster effect”of the pre-made food industrial park,in order to provide reference for the high-quality development of pre-made food industry.
