摘要 食品安全是全球关注的焦点。为了提高食品安全监督效率和准确性,本文对快速检测技术在食品安全监督中的应用进行探讨,介绍了快速检测技术的概念,分析了其高灵敏度、高选择性、高通量等优势,详细阐述了在食品安全监督中常见的5种主要快速检测技术:化学比色法、酶抑制法、基因芯片法、生物传感技术和蛋白质芯片法,并以具体案例说明快速检测技术在检测微生物、添加剂等方面的应用,体现了该项技术在食品安全监管中的重要价值,以期为食品安全监督提供参考。 Food safety is a global concern.In order to improve the efficiency and accuracy of food safety supervision,this article explores the application of rapid detection technology in food safety supervision.The concept of rapid detection technology was introduced,and its advantages such as high sensitivity,high selectivity,and high throughput were analyzed.Five common rapid detection technologies in food safety supervision were elaborated in detail:chemical colorimetric method,enzyme inhibition method,gene chip method,biosensing technology,and protein chip method.Specific cases were used to illustrate the application of rapid detection technology in detecting microorganisms,additives,and other aspects,demonstrating the important value of this technology in food safety,in order to provide reference for food safety supervision.
