黄金百香果果实品质与矿质元素的灰色关联度分析

摘要 为明确黄金百香果果实品质与矿质营养之间的关系,以芭乐味黄金百香果为研究对象,对果实各发育期的矿质元素含量和可溶性固形物、可滴定酸、维生素C、色素类物质含量进行动态分析,并采用灰色关联度分析矿质元素和果实品质的相关性。结果表明,在果实发育过程中,大量元素含量表现为K>N>Ca>S>Mg>P,微量元素含量表现为Na>Fe>Mn>Zn>B>Cu>Se>Mo,且果皮各矿质元素含量均远高于果肉。随着果实成熟,果肉可溶性固形物、可滴定酸、类黄酮、类胡萝卜素含量均呈先上升后下降的趋势,固酸比和花青素含量均呈逐渐升高的趋势,维生素C、叶绿素a、叶绿素b含量均呈逐渐降低的趋势。灰色关联度分析结果表明,果皮N、P、K、Ca、Mg、S、Na、B、Cu、Se等元素含量和果肉N、P、K、Ca、S、Cu、Na、B、Zn、Mn等元素含量与可溶性固形物、可滴定酸、维生素C、类黄酮、花青素、叶绿素a、叶绿素b、类胡萝卜素含量和固酸比均存在较高的关联度。综上,黄金百香果果实发育期对大量元素K和N的需求最高,对微量元素Na和Fe的需求最高;类胡萝卜素为主要影响果肉颜色的色素类物质,其次为花青素;果皮开始着色期为果实糖酸品质变化的关键期,应注重N、K、Cu、Na、B、Zn等元素的施用。研究结果为科学指导黄金百香果施肥提供了理论依据。 In order to clarify the relationship between fruit quality and mineral elements of yellow passion fruit,‘Guava-flavored Yellow Passion Fruit’were selected as the research materials to dynamic analysis the contents of mineral elements,soluble solid,titratable acid,vitamin C,pigment in fruit ripening period.The grey correlation analysis was used to analyze the correlation between mineral elements and fruit quality.The results showed that during the fruit developmental phase,the contents of macroelement were K>N>Ca>S>Mg>P,and the contents of microelement were Na>Fe>Mn>Zn>B>Cu>Se>Mo,and the contents of various mineral elements in the peel were much higher than those in the pulp.During fruit developmental phase of yellow passion fruit,the contents of soluble solids,titratable acid,carotenoids and flavonoids in pulp showed a increased firstly and then decreased trend,the solid acid ratio and anthocyanins content in pulp showed a increased gradually trend,and the contents of vitamin C,chlorophyll a and chlorophyll b in pulp showed a decreased gradually trend.Grey correlation analysis showed that the contents of N,P,K,Ca,Mg,S,Na,B,Cu,Se elements in peel and N,P,K,Ca,S,Cu,Na,B,Zn,Mn elements in pulp of yellow passion fruit were highly correlated with the contents of soluble solids,titratable acid,vitamin C,flavonoids,anthocyanins,chlorophyll a,chlorophyll b,carotenoids and solid acid ratio.Therefore,the highest demand for macroelement K,N and microelement Na,Fe during developmental phase of yellow passion fruit.Carotenoids are the main pigments that affect the color of fruit pulp,followed by anthocyanins.The beginning coloring period of the fruit peel is the key period for the change of fruit sugar and acid quality,with emphasis on the application of elements such as N,K,Cu,Na,B and Zn.The research results provide a theoretical basis for guiding the scientific fertilization of yellow passion fruit.
