摘要 蔗糖是普遍存在于植物中的一种二糖,是关系国计民生的重要战略物资。作为生命基本物质的糖类分子,其提供能量和具有甜味的生理特性是人们最关注的性质。此外,由于蔗糖的结构特点,其衍生物在医药、食品相关领域发挥着重要的基础作用。为更好地了解蔗糖在食药领域的应用情况,以期大众能科学认识食糖,介绍了蔗糖的代谢过程、医用历史、药用现状以及食品效用,总结了以蔗糖作为原料生产的药物、药用辅料、食品添加剂、营养强化剂、益生元等基本的应用情况。最后,整理了权威机构的糖摄入量建议,旨在引导民众合理消费食糖。 Sucrose is a kind of disaccharide which exists widely in plants.It is an important strategic material related to national economy and people's livelihood.As a kind of basic life material,sucrose provides energy and has a sweet taste,and these physiological properties are the ones people pay the most attention to.In addition,due to the structural characteristics of sucrose,its derivatives play an important fundamental role in medicine and food related fields.In order to better understand the application of sucrose in the field of food and medicine,and hope that the public can understand sugar scientifically,the metabolic process,medical history,medicinal status and food utility of sucrose are introduced,and the basic application of drugs,pharmaceutical excipients,food additives,nutritional fortifiers and prebiotics produced by sucrose as raw materials are summarized.Finally,the author summarized the sugar intake recommendations of authoritative institutions,aiming at guiding people to consume sugar reasonably.
