弃琼拾砾:19世纪英国食品掺假与工人认知

摘要 随着城市人口的增长和新经济理论的适用,英国在19世纪出现严重的食品掺假问题,引发社会各界广泛关注。为了避免议会出台相关法案来强制解决掺假问题,相当数量的商人开始自发售卖洁净食品,形成了一场“洁净食品运动”。作为掺假食品的最大受害者,工人阶级以合作社的形式投入到这场运动中来。合作社运动旨在改善工人消费者的饮食状况,但却在推广洁净食品的过程中遭到部分工人群体的强烈抵制。究其原因,首先,部分工人群体并不知道他们购买的是掺假食品。其次,工人聚居区的小商店是售卖掺假食品的重灾区。最后,影响工人阶级对食品认知的根本原因在于其经济地位。在罗奇代尔先锋合作社、中央合作社等合作社的共同努力下,部分工人消费者才开始纠正对食品的认知。 With the growth of the urban population and the application of new economic theories,serious food adulteration problems occurred in Britain in the 19th Century,causing widespread concern from people of all walks of life.To avoid the introduction of relevant parliamentary laws to solve this problem,a significant number of merchants began to sell pure food on their own initiative,forming“The Campaign for Pure Food”.As the biggest victims of adulterated food,the working class had joined the movement in the form of cooperatives.The Cooperative Movement,which aimed to improve the working consumers’diet,had encountered severe opposition from some workers in the promotion of pure food.The reasons for this:first,some groups of workers were uninformed that they were buying adulterated food;second,small stores in workers’communities the most likely to offer adulterated food;and finally,the primary factor influencing the working class’perception of food was their economic status.Only by the combined efforts of cooperatives such as Rochdale Pioneers and Co-operative Central Agency began some working consumers to change their perceptions of food.
