摘要
目的:为了准确检测食品中反式脂肪酸的含量,从而开发一种新检测方法。方法:采用气质联用仪测定16种反式脂肪酸,选择最优实验前处理方法,对色谱、质谱条件进行优化,采用面积归一化法计算,建立了一种便捷、高效的检测方法。结果:该方法的检出限为0.01%(以脂肪计),回收率在81%~108%,RSD为3.1%~11.4%。结论:该方法为解决反式脂肪酸定性复杂这一难题提供了一种方案。
Objective:In order to accurately detect the contents of trans fatty acids in foods,a new method was developed.Method:16 kinds of trans-fatty acids were determined by GC-MS,the optimal pretreatment method was selected,the chromatographic and mass spectral conditions were optimized,and the area normalization method was used to calculate,thus a convenient and efficient detection method was established.Result:The detection limits of this method were 0.01%(measured by fat),and the rate of recovery was between 81%and 108%,and the RSD was 3.1%~11.4%.Conclusion:This method provided a solution to resolve the complex problem of determining trans-fatty acids.
