4种食用植物油中酸价的测定方法对比分析

摘要 目的:分析3种不同酸价测定方法对4种食用植物油酸价的测定效果。方法:选取大豆油、玉米油、茶籽油和花生油4种植物油样品,分别采用冷溶剂指示剂滴定、冷溶剂自动电位滴定和热乙醇指示剂滴定进行酸价测定,并对测定结果进行分析。结果:通过6次平行试验结果可知,冷溶剂自动电位滴定仪法测定的大豆油、玉米油、茶籽油和花生油4种食用植物油酸价的平均值和相对标准偏差最小,酸价平均值分别为0.08 mg·g^(-1)、0.07 mg·g^(-1)、0.43 mg·g^(-1)和0.80 mg·g^(-1);相对标准偏差分别为11.1%、11.1%、1.8%和2.4%。结论:使用冷溶剂自动电位滴定法测定4种食用植物油酸价的精确度最好,结果准确、误差小。 Objective:To analyze the effect of three different acid value titration methods on the determination of the acid value of four edible vegetable oils.Method:Four vegetable oil samples,namely soybean oil,corn oil,tea seed oil,and peanut oil,were selected for acid value determination using cold solvent indicator titration,cold solvent automatic potentiometric titration,and hot ethanol indicator titration,respectively.The determination results were analyzed.Result:The results of 6 parallel tests showed that the mean value and relative standard deviation of oleic acid value of soybean oil,corn oil,tea seed oil and peanut oil measured by cold solvent automatic potentiometric titration method were the smallest,and the average value of the acid value was 0.08 mg·g^(-1),0.07 mg·g^(-1),0.43 mg·g^(-1),and 0.80 mg·g^(-1),respectively;the relative standard deviations were 11.1%,11.1%,1.8%,and 2.4%.Conclusion:The use of cold solvent automatic potentiometric titration for the determination of the acid value of four edible vegetable oils has the best accuracy,accurate results,and small errors.
