摘要
以固态法酿造清香型白酒的酒醅为原料,以甑桶蒸馏方式为对照,探究塔式蒸馏在不同蒸汽流量、甑桶层数、醅层厚度下对优质酒产率与风味物质馏出的影响。结果表明,甑桶蒸馏的优质酒产率为12.44%;在20 cm(9层)与30 cm(6层)醅层厚度条件下,塔式蒸馏的蒸汽流量为0.2 t/h时,其优质酒产率达到最佳,分别为13.89%、12.09%;在20 cm与30 cm醅层厚度下,甑桶层数为6~9层时30 cm醅层厚度的优质酒产率(12.52%~13.89%)均高于甑桶层数为3~6层时20 cm醅层厚度的优质酒产率(10.83%~12.09%);由混合蒸汽温度与馏酒口的酒精度变化趋势可知,馏酒口的酒精度为6%vol时馏酒结束。经塔式蒸馏与甑桶蒸馏的风味物质热图对比可知,塔式蒸馏方式对头酒、主体酒、尾酒阶段中风味物质含量有一定的改善作用。
Using fermented grains of light-flavor(Qingxiangxing)Baijiu by solid-state fermentation as raw material,and steaming bucket distillation as the contrast,the effects of tower distillation on the yield and flavor distillates of high-quality liquor under different steam flow rates,barrel layers,and thickness of fermented grains were investigated.The results showed that the yield of high-quality liquor in steaming bucket distillation was 12.44%.Under the conditions of 20 cm(9 layers)and 30 cm(6 layers)thickness of fermented grains,when the steam flow rates of tower distillation was 0.2 t/h,the yield of high-quality liquor reached optimal,which were 13.89%and 12.09%,respectively.Under the conditions of 20 cm and 30 cm thickness of fermented grains,the yield of high-quality liquor with 30 cm thickness of fermented grains in steaming bucket with 6-9 layers(12.52%-13.89%)was higher than that with 20 cm thickness of fermented grains insteaming bucket with 3-6 layers(10.83%-12.09%).According to the changing trend of mixing steam temperature and alcohol content of distilling mouth,and the distillation ended when the alcohol content of distilling mouth was 6%vol.By comparing the heat map of flavor substances between tower distillation and steaming bucket distillation,it could be seen that tower distillation can improve the contents of flavor substances in head liquor,main liquor and tail liquor stages.
