摘要
为研究不同气调包装对水培小白菜保鲜效果的影响,以空气为对照组,探讨在2℃低温下不同气调包装组(5%O_(2)+5%CO_(2),5%O_(2)+10%CO_(2),10%O_(2)+5%CO_(2),10%O_(2)+10%CO_(2))对水培小白菜营养和生理指标的影响。结果表明:随着贮藏时间的延长,小白菜的呼吸强度呈下降趋势,初始CO_(2)浓度为5%,O_(2)浓度在5%—10%时有利于降低小白菜的呼吸强度;5%O_(2)+10%CO_(2)和10%O_(2)+5%CO_(2)处理组可溶性固形物下降速度相对缓慢;10%O_(2)+5%CO_(2)组色差变化最小,感官品质较好,可溶性固形物、色泽、水分的含量较高,保藏效果最佳。研究对水培小白菜的贮藏保鲜具有一定的指导作用。
In order to investigate the effects of different modified atmosphere packaging on the preservation of hydroponic Chinese cabbage,different modified atmosphere packaging groups(5%O_(2)+5%CO_(2),5%O_(2)+10%CO_(2),10%O_(2)+5%CO_(2),10%O_(2)+10%CO_(2))were explored at 2℃with air as the control group,and the nutritional and physiological indexes of hydroponic Chinese cabbage were measured.The results showed that with the prolongation of storage time,the respiration intensity of the Chinese cabbage showed a decreasing trend,and the initial CO_(2)concentration of 5%,and O_(2)concentration of 5%—10%was beneficial to reduce the respiration intensity of Chinese cabbage.The groups treated with 5%O_(2)+10%CO_(2)and 10%O_(2)+5%CO_(2)had a relatively slow decrease rate of soluble solids.The color difference of the group treated with 10%O_(2)+5%CO_(2)was the smallest,which had better sensory quality,higher soluble solids,color and water content,and the best preservation effect.This study has certain guiding significance for the preservation of hydroponic Chinese cabbage.
