不同比例茅台酒糟生物料对杂交牛屠宰性能及肌肉脂质代谢组学影响研究 被引量:1

Effects of different proportions of Moutai distiller's grains bio-material on slaughter performance and muscle lipid metabolomics in crossbred cattle

摘要 为研究不同比例茅台湿酒糟生物料对杂交牛屠宰性能、肌内蛋白质及脂肪含量,肌内脂质代谢组学的影响,试验选用18头健康杂交牛(贵州关岭牛×西门塔尔牛)随机分为3个试验组,每组6个重复。对照组(S0C)、试验1组(S1C)、试验2组(S2C)按牛体重分别饲喂添加酒糟生物料0、1.6%、3.2%的日粮。经过60 d试验后屠宰,取背最长肌测定肌肉中脂肪和蛋白含量,进一步利用超高效液相色谱仪和Q-Exactive Plus质谱仪进行脂质代谢组学测定。结果表明:(1)与对照组相比,S2C组杂交牛的背部肌肉厚显著提高50.6%(P <0.05),但对其他屠宰指标无显著影响。(2)添加酒糟生物料可提高肌肉中蛋白质和脂肪含量,但差异不显著(P> 0.05)。(3)从脂质亚类水平来看,与对照组相比,S1C组和S2C组脂质代谢组物中的脂肪酸(FA)相对含量分别显著提高82.4%和16.7%(P <0.05);S2C组的鞘磷脂(SM)显著提高32.1%(P <0.05)而二糖脑苷脂(CerG2)含量显著降低50.8%(P <0.05);与S1C组相比,S2C组的FA和CerG2含量显著降低36.0%和53.8%(P <0.05)。从脂质分子水平来看,筛选确定了40种差异脂质分子,包括6种酰基肉碱(AcCa)、6种溶血性磷脂酰胆碱(LPC)、6种磷脂酰乙醇胺(PE)、5种磷脂酰胆碱(PC)、5种磷脂酰丝氨酸(PS)等;其中,S1C组的优势脂质分子是LPC,S2C组的是AcCa。综上所述,饲喂茅台酒糟生物料可通过提高杂交牛的背部肌肉厚度,且通过改善肌内蛋白质含量、脂肪含量及脂肪中各种脂质代谢分子表达量,使肉质得到改善。 To study the effects of different proportions of Moutai distiller's grains bio-materials on slaughter performance,intramuscular protein and fat contents and intramuscular lipid metabolomics in crossbred cattle.Eighteen healthy crossbred cattle(Guizhou Guanling cattle×Simmental cattle)were used as experimental animals,which were randomly divided into three experimental groups with 6 replicates per group and 1 cow per replicate.The control group(S0C)diet did not contain wet distillers'lees bio-material,in trial group 1(S1C),1.6%of cattle body weight was added with distiller's grains biological material,in trial group 2(S2C),3.2%distiller's grains biofilm was used,the experiment lasted for 60 days.Slaughter determination was carried out after the experiment,fat and protein contents in longissimus dorsi muscle were measured,Ultra-performance liquid chromatograph and Q-EX Active Plus mass spectrometer were used to determine lipid metabolomics.The results showed that:(1)Compared with the control group,the back muscle thickness of S2C group was significantly increased by 50.6%(P<0.05),there was no significant effect on other slaughter indexes.(2)The addition of distiller's grains bio-material tended to increase the protein and fat contents in muscle,but there was no significant difference(P>0.05).(3)From the level of lipid subclass,compared with the control group,the relative content of fatty acid(FA)in lipid metabolome of S1C group and S2C group was significantly increased by 82.4%and 16.7%(P<0.05)respectively,the sphingomyelin(SM)content in S2C group was significantly increased by 32.1%(P<0.05),while the content of glucosylsylide(CerG2)was significantly decreased by 50.8%(P<0.05).Compared with S1C group,the contents of FA and CerG2 in S2C group were significantly decreased by 36.0%and 53.8%respectively(P<0.05).At the lipid molecular level,screening identified 40 differential lipid molecules,including 6 kinds of AcCa,6 kinds of LPC,6 kinds of PE,5 kinds of PC,5 kinds of PS and so on.The dominant lipid molecule was LPC
