摘要 目的:用纤维素酶提取蓝莓果渣多酚,以多酚得率为指标优化提取工艺。方法:选取纤维素酶添加量、酶解pH、料液比、酶解时间、酶解温度等5种因素分别利用单因素试验和响应面分析法,研究蓝莓果渣多酚最佳提取工艺。结果:当纤维素酶用量为6.8 mg/g,提取初始pH为4.8,料液比为1∶20,提取时间为6 h,温度为50℃时,蓝莓果渣中多酚的得率最高,达到8.1306 mg/g。结论:纤维素酶水解法提取蓝莓果渣多酚,通过调整酶添加量、酶解pH、料液比、酶解温度、酶解时间可以显著增加蓝莓果渣多酚得率。 Objective:Blueberry fruit residue polyphenol was extracted by cellulase,and the extraction process was optimized according to the polyphenols yield rate.Methods:The five index factors of cellulase addition,enzymolysis pH,material liquid ratio,enzymolysis time,and enzymolysis temperature are selected,respectively,using single factor test and response surface analysis to study the best extraction technology of blueberry pomace polyphenols.Results:When the cellulase dosage is 6.8 mg/g,the initial extraction pH is 4.8,the material-liquid ratio is 1∶20,the extraction time is 6 h,and the temperature is 50℃,and the yield of polyphenols in blueberry pomace is the highest,reaching 8.1306 mg/g.Conclusion:The cellulase hydrolysis method is used to extract blueberry pomace polyphenols,and the yield of blueberry pomace polyphenols can be significantly increased by adjusting the amount of enzyme,the pH of the enzyme hydrolysis,the ratio of material to liquid,the temperature of the enzyme hydrolysis,and the time of the enzyme hydrolysis.
