摘要 食品分类系统是准确开展食品抽检、国内外标准比对等工作的技术基础和先决条件,我国各标准中食品分类方式相对独立,通用性不高。本文通过分析比对国内外主要食品分类系统中肉及肉制品分类方式,建立肉及肉制品分类比对索引,为科学解读国内外相关产品限量值,制定一套通用兼容、科学合理、接驳流畅的食品安全分类标准提供技术支撑,为制修订肉及肉制品分类及相关限量标准提供参考。 Food classification system is the technical basis and prerequisite for accurately carrying out food sampling inspection and comparison of domestic and foreign standards.The food classification methods in various standards in China are relatively independent and lack of versatility.In this paper,by analyzing and comparing the classification methods of meat and meat products in the main food classification systems at home and abroad,the classification index for meat and meat products was established.It provides technical support for the scientific interpretation of domestic and foreign related product limits and the formulation of a set of universal,compatible,scientific and reasonable food safety classification standards,and also provides a reference for the preparation and revision of meat and meat products classification and related limit standards.
