名特优新鸡肉产品质量安全评价方法探究

摘要 本文通过对名特优新鸡肉产品中违禁物质类、兽药残留、农药残留、重金属、微生物、常规理化六大类72项指标进行评价研究,建立名特优新鸡肉产品质量安全风险指数的评价方法,为名特优新鸡肉产品的安全评价提供参考。结果发现,除常规理化类项目评为中风险等级外,该鸡肉样品的其他类别项目均为低风险等级,综合评价为中风险等级产品。 The quality and safety evaluation method of Famous,Special,Excellent and New chicken products were established by measuring 72 indexes from 6 categories including prohibited substances,veterinary drug residues,pesticide residues,heavy metals,microorganisms,and conventional physical and chemical properties,laying the foundation for the safety evaluation of Famous,Special,Excellent and New chicken products.According to the results of the conventional physical and chemical indexes,the products were rated as medium risk,while according to the other indexes,the products were rated as low risk.Taken together,these chicken products were rated as medium risk products.
