壳聚糖为基础的可食用膜研究进展 被引量:3

摘要 目前食品包装材料大部分是以聚乙烯为基础膜材的塑料制品,具有良好的柔软性、透明性,耐碱、耐酸和耐一般有机溶剂。但是这种包装材料在自然界中不可降解,对资源和环境产生污染。为解决这一问题,人们可食用膜进行了广泛的研究。可食用膜是由可食用材料与一些功能性添加剂制成。可食用膜不仅可生物降解,而且可以作为食品的一部分食用,不会造成环境污染。首先介绍了可食用包装材料的研究背景,其次综述了由壳聚糖为原料制备可食用复合膜的方法。最后介绍了壳聚糖可食用复合膜的应用。壳聚糖可食用膜原料丰富、价格低廉、易于制备,在食品包装领域具有广泛的应用前景。 At present,most food packaging materials are plastic products based on polyethylene film,which have good softness,transparency,alkali resistance,acid resistance and general organic solvents resistance.However,this material is non degradable in nature and will cause pollution to the environment.In order to solve the problem,extensive researches were carried out on edible film.Edible film is made of edible materials and some functional additives.Edible film is not only biodegradable,but also edible as a part of food,and will not cause environmental pollution.This paper firstly introduces the background of edible packaging materials,and then summarizes the methods of preparing edible composite films from chitosan.Finally,the application of edible composite membrane based on chitosan was introduced.Chitosan edible packaging materials have a wide range of sources,low price,easy to prepare,and have a wide application prospect in the field of food packaging.
