摘要
目的:以白心火龙果果皮为原料提取多糖,对果皮多糖的抗氧化活性进行探讨。方法:采用水提醇沉法进行多糖提取,在单因素基础上设计三因素三水平正交试验,对DPPH自由基清除率进行测定。结果:优化得到白心火龙果果皮多糖提取的最佳工艺条件:提取时间3 h、提取温度90℃、液料比30∶1,在此条件下的提取率为3.14%;多糖浓度与抗氧化活性之间存在线性关系,得到果皮多糖对DPPH自由基的IC50值为4.89。结论:证实果皮多糖具有较好的抗氧化能力,白心火龙果果皮具有开发为抗氧化等功能性食品的潜力。
Objective:To study the antioxidant activity of polysaccharide extracted from Hylocereus undatus peel.Methods:The polysaccharide was extracted by water extraction and alcohol precipitation.On the basis of single factor,a three-factor and three-level orthogonal test was designed to determine the DPPH radical scavenging rate.Results:The optimum extraction conditions were as follows:extraction time 3 h,extraction temperature 90℃,liquid material ratio 30∶1.Under these conditions,the extraction rate was 3.14%;There was a linear relationship between polysaccharide concentration and antioxidant activity.The antioxidant capacity of IC50 was used to evaluate the antioxidant activity of peel polysaccharide.Conclusion:The peel of H.undatus has the potential to be developed into antioxidant and other functional foods.
