摘要
大曲作为糖化发酵和生香剂在白酒酿造过程中具有重要作用,大曲微生物代谢产生的大分子有机酸等挥发性较低的组分,以及酯类等挥发性香气组分对其原酒的风格和品质具有重要影响。实验分别采用UPLC-MS和HS-SPME-GC-MS两种方法对浓香型大曲进行组分检测并分类对比,以探究浓香型大曲的组分特征。结果表明:样品经UPLC-MS分析共鉴出334种组分,包括酯类29种、醇类39种、酸类140种、醛酮类41种、含氮化合物12种、呋喃类4种、含硫化合物3种、其他类66种;样品经HS-SPME-GC-MS分析共鉴出36种组分,包括酯类5种、醇类4种、酸类4种、醛酮类4种、杂环类/含氮化合物6种、烃类5种、芳香族化合物4种、酚类4种;其中,含硫化合物、酚类化合物和吡嗪类化合物等均可作为浓香型大曲的特征组分。该研究有助于明确浓香型大曲的组分特征,为大曲成分检测提供数据参考。
Daqu, as saccharification fermentation and flavoring agent, plays an important role in Baijiu making. Low volatile components such as macromolecular organic acids, volatile aroma components such as esters produced by microorganism metabolism of Daqu have an important influence on the style and quality of Baijiu. In this experiment, UPLC-MS and HS-SPME-GC-MS were used to detect and components to explore the characteristic components of Nongxiangxing-Daqu. The results showed that a total of 334 compounds were identified by UPLC-MS, includes 29 esters, 39 alcohols, 140 acids, 41 aldehydes and ketones, 12 nitrogen-containing compounds, 4 furans,3 sulfur-containing compounds and 66 other compounds. A total of 36 compounds were identified by HS-SPME-GC-MS, includes 5 esters,4 alcohols, 4 acids, 4 aldehydes and ketones, 6 heterocyclic/nitrogen compounds, 5 hydrocarbon compounds, 4 aromatic compounds and 4phenols. Among them, sulfur compounds, phenolic compounds and pyrazine compounds can be used as the characteristic components of Nongxiangxing-Daqu. This study is helpful to clarify the component characteristics of Nongxiangxing-Daqu and provide data references for composition detection of Daqu.
