在大曲培养过程中,测定原料的粉碎度、鲜坯的水分,并对对应的出房大曲进行各理化指标的检测,包括糖化力、发酵力等,对比所得数据,分析大曲质量和粉碎度、水分的关系。
In the process of Daqu production, we select some Daqu as sample, Measuring the comminution degrees of crude material and Moisture content in the raw Daqu. According to the same process, then testing the measuring the mature Daqu, such as saccharifying power, fermenting power and so on. Contrasting the date,we can Analysis of the Relationship between the Quality of Daqu and Comminution degrees and Moisture content.
