摘要
为研究玫瑰茄色素的稳定性和抗氧化活性,采用颜色对比法和测定紫外分光光度计吸光度值对其进行试验。结果表明,玫瑰茄色素在pH<3,60℃条件下具有较好的稳定性,K^(+)、Na^(+)、Mg^(2+)、Ca^(2+)对其稳定性无影响,紫外照射、碱性物质和Cu^(2+)、Fe^(3+)、Al^(3+)对其影响较大;自由基清除试验表明玫瑰茄色素水溶液对DPPH·和ABTS^(+)·具有较好的清除效果,清除率分别达94.1%和91.2%,对·OH的清除能力达50%以上。研究表明玫瑰茄色素具有较好的稳定性和较强的抗氧化活性,为其在食品、饮料和化妆品等行业中的加工应用提供一定的理论依据。
To study the stability and antioxidant activity of roselle pigment,the color contrast method and the absorbance value of ultraviolet spectrophotometer were used to test it.The results show that roselle pigment has good stability at pH<3 and 60℃,K^(+),Na^(+),Mg^(2+),Ca^(2+)has no effect on its stability,but ultraviolet irradiation,alkaline substances and Cu^(2+),Fe^(3+)and Al^(3+)has a great effect on its stability.Free radical scavenging experiments show that aqueous solution of roselle pigment could effectively remove DPPH·and ABTS+·,the scavenging rate is 94.1%and 91.2%,respectively,and the scavenging ability of·OH is more than 50%.The results show that roselle pigment has good stability and stronger antioxidant activity,which provides a certain theoretical basis for its processing and application in food,beverage and cosmetics industries.
