景德镇市米粉质量与安全状况分析 被引量:1

摘要 本文对景德镇市生产、流通和餐饮等环节中的米粉开展品质指标、食品添加剂、非食用物质、重金属污染和微生物污染等15个指标的检测,对其质量安全状况进行调查与分析。结果表明,景德镇市米粉的水分和二氧化硫指标的不合格率分别为8.7%和4.3%,其他指标均合格。由此可见,品质指标不合格和非法添加是当前影响景德镇米粉质量及安全的关键风险点,生产厂家和监管部门应加强对该方面检测指标的重视和监管。 Totally 15 items including quality indicators,food additives,non-edible substances,heavy metal elements,and microbial contamination in rice noodles in the production,circulation and catering link of Jingdezhen were tested,the quality and safety status were evaluated and analyzed.The results indicated that the unqualified rates of the moisture and sulfur dioxide in Jingdezhen rice noodles were 8.7%and 4.3%,the other indicators were qualified.As we can seen,the quality indicators and illegal addition of food additives are the key risk points affecting the current quality and safety of Jingdezhen rice noodles,so the manufacturers and supervision department should be paid more attention and strengthened supervision to the detection indexes.
