摘要
目的对辽宁省2019-2020年食品中食源性致病微生物的污染及其分布状况进行分析,了解各季度食品中致病微生物的分布情况,为辽宁省的食源性病原体监测与控制提供借鉴。方法共采集辽宁省2019-2020年3318份样品,按照《国家食品污染物和有害因素风险监测工作手册》对食源性致病微生物进行检测。结果共检出阳性菌株420份,检出率为12.66%。第一季度克罗诺杆菌属检出率最高达到33.33%,第二季度溶藻弧菌检出率最高达到17.53%,第三季度和第四季度都是克罗诺杆菌属检出率最高达到21.62%和12.12%。各卫生指标菌中2019年菌落总数在第三季度的合格率最低为95.44%,大肠埃希菌计数在第二季度的合格率最低为94.85%;2020年菌落总数在第二季度的合格率最低为99.05%,大肠埃希菌计数在第二季度的合格率最低为87.67%。结论辽宁省食品中存在食源性致病微生物的污染,应加强辽宁省食品卫生部门的监管力度,对食品卫生知识重点宣传教育,防范食源性疾病及食物中毒的暴发事件,保障人民食品安全。
Objective To analyze the contamination and distribution of foodborne pathogenic microorganisms in Liaoning Province from 2019 to 2020, learn their distribution in food in each quarter, and provide reference for the monitoring and control of foodborne pathogens in Liaoning Province. Methods A total of 3 318 samples were collected from 2019 to2020 in Liaoning, and foodborne pathogenic microorganisms were detected and analyzed according to the national risk monitoring manual of food pollutants and hazardous factors. Results A total of 420 positive strains were detected and the detection rate was 12.66%. The highest detection rate was that of Enterobacter sakazakii at 33.33% in the first quarter, that of Vibrio alginolyticus at 17.53% in the second quarter, that of Enterobacter sakazakii at 21.62% in the third quarter and at12.12% in the fourth quarter. Among all the health indicators, the pass rate of the total count of colonies in the third quarter of 2019 was the lowest at 95.44%, and that of the count of Escherichia coli in the second quarter was the lowest at 94.85%.In 2020, the total colony count had a lowest pass rate of 99.05% in the second quarter and the lowest Escherichia coli count in the second quarter was 87.67%. Conclusion There exists contamination of pathogenic microorganisms in food in Liaoning. Monitoring of pathogenic microorganisms should be strengthened to prevent the outbreak of foodborne diseases and food poisoning and ensure the food safety in Liaoning.
