自由贸易港建设背景下琼菜老字号餐厅游客感知研究——以海口龙华沿江饭店为例

摘要 海南自由贸易港和国际旅游消费中心的建设,在刺激海南省整体经济发展的同时,也刺激了游客对其美食消费的需求,以至于能够体现海南地方特色的老字号餐厅越来越受到游客的喜爱。通过以海南琼菜老字号代表——海口龙华沿江饭店为例,探讨食品质量、用餐氛围、就餐意向对琼菜老字号餐厅游客感知和接受度的影响。研究结果显示,食品质量是影响游客感知和接受度的最重要的因素。这一指标对于想要通过提高服务质量满足游客需求,从而达到提高游客回头率、建立口碑和顾客忠诚度的海南老字号餐厅来说,具有一定实践意义。 The construction of Hainan Free Trade Port and International Tourism Consumption Center not only stimulates the overall economic development of Hainan Province, but also stimulates the demand of tourists for their food consumption, so that the time-honored restaurants that can reflect the local characteristics of Hainan are more and more popular with tourists. This paper discusses the influence of food quality,dining atmosphere and eating intention on tourists’ perception and acceptance of Hainan cuisine time-honored restaurants by taking Haikou Longhua Riverside Hotel as an example. The results show that food quality is the most important factor affecting tourists’ perception and acceptance. This indicator is of practical significance for Hainan time-honored restaurants that want to meet the needs of tourists by improving the service quality, so as to improve the return rate of tourists, establish reputation and customer loyalty.
