摘要
基质辅助激光解吸电离飞行时间质谱(MALDI-TOF MS)电离产生的碎片较少,可以在1000-400000 m/z分子量范围内对大分子物质进行分析,此外还兼具检测速度快和通量大的优势,吸引众多的研究者不断扩大其研究范围。本文就MALDI-TOF MS技术在食品微生物检测、食品掺假鉴别以及食品品质等研究中的应用进行阐述。
Matrix-assisted laser desorption ionizing time of fl ight mass spectrometry(MALDI-TOF MS) generates less ionization debris, and can analyze macromolecules in the molecular weight range of 1000-400000 m/z. Besides, it has the advantages of high detection speed and large fl ux, attracting many researchers to expand their research scope. In this paper, the application of MALDI-TOF MS technology in food microbiological detection, food adulteration identifi cation and food quality research is described.
