摘要
通过对2016—2020年渝东北片区9个区县2 319份样品的铝残留量检测数据进行分析,了解该片区食品中铝添加剂使用和超标情况,为居民消费和食品监管提供参考。结果表明,渝东北片区9个区县食品铝残留量检出率为17.3%,超标率为2.7%,主要超标样品为油炸面制品、淀粉制品、发酵面制品;散装食品超标率(7.1%)高于预包装食品(1.4%);餐饮环节食品超标率(8.1%)高于流通环节(2.1%)和生产环节(0.8%)。因此,食品安全监管部门应针对性抽检并加大监管力度,保护消费者食品安全。
To analyze the aluminum residue detection data of 2 319 samples from 9 districts in northeast Chongqing from 2016 to 2020, and to understand the use and excessive limit of aluminum additives in food in this area, which could provide reference for residents’ consumption and food supervision. The results showed that the detection rate of food aluminum residues in 9 districts in northeast Chongqing was 17.3%, and the excess rate was 2.7%. The main samples exceeding the standard were fried flour products, starch products and fermented flour products. The rate of exceeded standards for bulk foods( 7.1%) is higher than that for prepackaged foods(1.4%). The over-standard rate of food in catering links(8.1%) was higher than that in circulation links(2.1%) and production links(0.8%). Therefore, the food safety supervision department should make targeted sampling inspection and strengthen supervision to protect food safety of consumers.
