摘要
以食品接触用200、300、400系不锈钢为研究对象,GB/T 4336-2016《食品安全国家标准—食品接触用金属材料及制品》标准试验为依据,模拟含盐(NaCl)介质物和碱性(NaHCO_(3))介质物环境,通过金属离子迁移试验及电化学试验,研究了不锈钢材料的有害金属离子迁移行为。结果表明:各种不锈钢材料在不同介质环境中的有害金属离子迁移行为具有一定的差异性,应根据实际食品接触环境选择适合的不锈钢材料;300系不锈钢在不同的介质物环境敏感性较低,相对有害金属离子的迁移浓度较低,安全系数较高。
Based on GB/T 4336-2016"National Standard for Food Safety-Metal Materials and Products for Food Contact"standard test,the harmful metal ions migration behaviors of food grade 200,300 and 400 series stainless steel in simulated saline(NaCl)medium and alkaline(NaHCO_(3))environments were studied.Specifically,the experiments of harmful metal ions migration and electrochemical experiment were carried out.The results showed that the harmful metal ion migration behavior of stainless steels had difference in different medium environment.Therefore,a suitable stainless steel should be selected according to the actual food contact environment.It was worth emphasizing that 300 series stainless steel in different medium environment had low environmental sensitivity,low harmful metal ions migration behavior,and high safety factor.
