摘要
随着当今膳食结构的优化,消费者更加青睐高蛋白、低脂肪、低胆固醇的绿色营养畜禽肉制品。畜禽的肌肉生长性状是影响产肉力等经济性状的重要因素之一,肌肉的生长和发育是决定畜禽胴体和肌肉重量的核心,肌纤维作为构成肌肉的基本单位,其种类、数量、伸展性等特性与肉品质紧密相关。MYOZ1基因是影响畜禽肉质性状的潜在候选基因,它通过参与Ca信号转导途径和调控Calcineurin/NFAT信号通路,从而对骨骼肌组织的发育、再生,以及骨骼肌纤维类型的转化等过程产生显著影响。文章综述了与肌纤维类型、MYOZ1基因生物学特性以及该基因表达对肌纤维的调控等研究进展,从而为更深层次地探究MYOZ1基因对肉质性状的影响提供参考。
With the optimization of dietary structure, consumers prefer green and nutritious livestock and poultry meat with high protein, low fat and low cholesterol. Muscle growth traits of livestock are one of the important factors affecting economic traits such as meat production power, and the growth and development of muscle is the core of determining carcass and muscle weight of livestock and poultry. Muscle fibers, as the basic unit that constitutes muscle, its type, number and extensibility are closely related to meat quality. MYOZ1 is a potential candidate gene affecting meat quality traits in livestock and poultry, and it is involved in the Casignal transduction pathway and regulates the Calcineurin/NFAT signal pathway, which has a significant impact on the development, regeneration of skeletal muscle tissue, and the transformation of skeletal muscle fiber types. Therefore, this paper reviewed the research progress related to muscle fiber types, the biological characteristics of MYOZ1, and the regulation of this gene expression on muscle fibers, so as provide a reference for a deeper exploration of the effect of MYOZ1 on meat quality traits.
