摘要
为提高喷雾干燥山楂粉的出粉率,将鲜山楂与水混合打浆后加入纤维素酶,进行酶解处理,考察纤维素酶对山楂浆酶解效果的影响。通过单因素实验确定山楂浆酶解的最佳条件,在单因素实验的基础上进行正交实验,以最终山楂沉淀的质量为参考指标优化制备工艺。结果表明,山楂浆的最佳酶解条件为纤维素酶含量0.3%,反应时间3 h,山楂和水的比例2∶6。纤维素酶对山楂浆进行酶解处理后,酶解效果好,山楂纤维少,山楂浆澄清度高。
In order to improve the yield of spray dried hawthorn powder,fresh hawthorn and water were mixed and beaten to pulp,then cellulase was added and enzymatic hydrolysis was carried out,the effect of cellulase on enzymatic hydrolysis of hawthorn pulp was investigated.The optimum conditions of enzymatic hydrolysis of hawthorn pulp were determined by single factor experiment.On the basis of single factor experiment,orthogonal experiment was carried out,and the optimum preparation conditions of hawthorn pulp were as follows:cellulase content 0.3%,reaction time 3 h,hawthorn to water ratio 2∶6.The results showed that the enzymatic hydrolysis of Hawthorn pulp with cellulase had good effect,less hawthorn fiber and higher clarity。
