摘要
燕窝是一种中国传统美食,是一类广泛的滋补食品,也是一种功能性食品,具有多种药用价值,从中国到世界各地越来越备受关注。通过介绍燕窝不同分类、不同加工工艺及不同加工工艺的燕窝营养成分差异,有利于消费者对燕窝及其制品有更深刻了解,为进一步研究燕窝产品、开发比如小分子肽燕窝、功能产品燕窝和燕窝口服液等提供参考依据。
Edible bird’s nest is a traditional Chinese delicacy,a wide-ranging nourishing food,and a functional food.It is considered to have a variety of medicinal values and has attracted more and more attention from China to all over the world.Through the introduction of different classifications,different processing techniques and different processing techniques of edible bird’s nest nutritional composition,it is helpful for consumers to have a deeper understanding of bird’s nest and its products.A reference basis can provided for further research on edible bird’s nest product development such as small molecule peptide edible bird’s nest,functional product edible bird’s nest and edible bird’s nest oral liquid.
