摘要
采用市售新鲜紫甘蓝作为原料,通过设计单因素试验和正交试验优化紫甘蓝色素的水浴法提取工艺,对所提取天然色素在不同酸碱性条件下的变色性能进行研究,探索其作为酸碱指示剂的应用性能。结果显示,水浴法最佳提取条件为含30%乙醇溶剂体系、pH 1、温度45℃、时间2 h。所提取的紫甘蓝色素能够对不同酸碱性条件显示良好的变色性能,对pH变化敏感,在pH 1~14的宽范围内具有明显颜色变化,可用于制备在普通实验室中使用的pH试纸,也可作为酸碱滴定的指示剂。
Using commercial fresh purple cabbage as material,the water-bath extraction of purple cabbage pigment was optimized by single-factor experiments and orthogonal experiments.The color change performance of the extracted natural pigments under different acid-base conditions and the potential to be used as acid-base indicator were studied.The results showed that the best extraction condition for the water bath method was 30%ethanol solvent system,pH 1,temperature 45℃and time 2 h.The extracted purple cabbage pigment showed sensitively color changing performance in a wide range of pH 1 to 14.The extracted purple cabbage pigment could be used to prepare pH test paper for the usage in ordinary laboratories.When the natural pigment was used as acid-base indicator,it exhibited good property in titration experiments.
