摘要
在红外辐射干燥条件下对双孢菇片进行了研究,对其在不同辐射温度和厚度条件下双孢菇片的水分扩散特性进行了研究。结果表明,在红外干燥双孢菇的过程中辐射温度和样本厚度对物料干燥过程的影响比较显著。基于Fick第二扩散定律的薄层干燥理论模型,求出了双孢菇片的有效水分扩散系数,其值分布在1.396×10^(-8)~1.3438×10^(-7) m^(2)/s,最后得出双孢菇片的平均活化能为36.48 kJ/mol。
Agaricus bisporus slices was dehydrated under different infrared drying conditions.It was indicated that infrared temperature and sample thickness had more influence on drying time.Moisture transfer was therefore a governing factor in drying process.The variation range of effective water diffusion coefficient of Agaricus bisporus was 1.396×10^(-8)~1.3438×10^(-7) m^(2)/s.Average activation energy was 36.48 kJ/mol.
