摘要
杨梅酯是一种含有顺反异构体的安全的食用香料。以工业乙醇钠为缩合剂,苯甲醛和氯乙酸乙酯为原料,采用Darzens反应生产杨梅酯产品。用色-质联用仪进行了含量分析和结构确定,其中顺式异构体的出峰面积百分比占7.14%,反式异构体的出峰面积百分比占89.45%,杂质为α-氯-3-苯基丙烯酸乙酯,出峰面积比占3.42%。文章简述了杨梅酯的生产工艺和质量标准,分析了影响品质控制的主要因素。
Ethyl 3-phenylglycidate is a kind of safe flavor containing cis and trans isomers.Ethyl 3-phenylglycidate was prepared by Darzens reaction of benzaldehyde and ethyl chloroacetate in the presence of sodium ethanol as condensation agent.The product was analyzed and confirmed by GC-MS.Area of cis-isomer is 7.14%.Area of trans-isomer is 89.45%.Area of ethylα-chloro-3-phenylacrylate as impurity is 3.42%.This paper briefly introduced the production technology and quality standard of Ethyl 3-phenylglycidate,and analysed the main factors that affected the quality control.
