摘要
对两种野生乳菇进行鉴定,并依据国际通用蛋白质评价模式对其营养进行评价。结果表明:两种乳菇分属于多汁乳菇(Lactarius volemus)和黑柄乳菇(Lactarius gerardii),子实体蛋白含量高,必需氨基酸、总氨基酸和鲜味氨基酸种类齐全。研究野生乳菇的营养成分为黔西南产乳菇的开发利用提供理论依据。
The fruiting bodies of two wild Lactarius were identified by molecular biology.Based on the international general nutritional value assessment method,the nutritional components and amino acid composition of the two wild Lactarius were analyzed.The results showed that the phylogenetic trees based on nLSU sequences demonstrated they belonged to Lactarius volemus and Lactarius gerardii,respectively.The protein content of fruiting bodies of two kinds of Lactarius was high,and there are a wide range of essential amino acids,total amino acids and flavor amino acids.This study laid a theoretical foundation for the development and utiliza-tion of Lactarius grown in Southwest Guizhou.
