不同贮藏湿度对番茄贮藏品质的影响 被引量:3

Effects of Different Storage Humidity on the Storage Quality of Tomato

摘要 为了探寻湿度对番茄果实角质层的结构组分及贮藏品质的影响,以‘汉蒙7号’番茄果实为试验材料,分别置于相对湿度为50%±5%和100%±5%的气候培养箱中进行贮藏,测定果实的失水率、可溶性固形物含量、质构、色差、多酚氧化酶(PPO)活性、过氧化物酶(POD)活性、丙二醛(MDA)含量、角质层形态结构以及SlSHINE3调控因子表达分析。结果表明,100%±5%贮藏湿度下的番茄能够更好地保持体内各种理化反应的正常运行,番茄角质层形态结构更加完整,角质层结构之间的细胞相较于50%±5%湿度的贮藏环境更加紧凑,果实的失水率降低,表皮更加鲜亮,PPO活性更低,MDA含量增长的更加缓慢。因此,在100%±5%的贮藏湿度下,‘汉蒙7号’番茄果实的品质、果皮显微结构更佳,更有利于番茄果实的贮藏保鲜和品质调控。 In order to seek the effects of humidity on cuticle structure and storage quality of tomato fruit, tomato fruits of ’Hanmeng 7’were used as material. The fruit was set in the climatic incubator with relative humidity of 50%±5% and 100%±5% respectively for storage. The water loss rate, soluble solids content, texture, color difference, the activities of PPO and POD and MDA, cuticle morphology and expression of SlSHINE3 regulatory factor were determined. The results showed that: the normal operation of physical and chemical reactions in tomato could be maintained better under 100%±5% humidity, and the cuticle structure of tomato was more complete, the cells in the cuticle structure were more compact than those in the 50%±5% humidity storage environment, the water loss rate of fruit was lower, the epidermis was brighter, the PPO activity was lower, and the MDA content increased more slowly. Therefore, in this research, the changes of fruit quality, anti-aging ability and pericarp microstructure of’Hanmeng 7’tomato during 100%±5% storage were better, which was more beneficial to the storage and quality control of tomato fruit.
