摘要
目的分析了解齐齐哈尔市地方特色食品马铃薯类制品粉条、粉丝中常用添加剂使用情况,为控制食品污染提供参考依据,为发展地方经济提供技术保障。方法在农贸市场、商场超市、批发市场等12家采样点采集64件本地产马铃薯粉条、粉丝,依照国家标准检验方法开展检测,并根据相关食品安全国家标准进行评价。检测项目包括铝、二氧化硫、甲醛次硫酸氢钠、乌洛托品。结果铝检出率100%,含量范围为19.8 mg/kg~459 mg/kg,超标样品7件,超标率10.9%。二氧化硫检出率51.6%,含量范围为0 g/kg~0.0096 g/kg,超标样品33件,超标率51.6%。甲醛次硫酸氢钠和乌洛托品均未检出。结论齐齐哈尔市地方特色食品马铃薯类制品粉条、粉丝存在滥用食品添加剂问题,建议生产企业严格遵守相关卫生标准,优化生产工艺,提高法律意识和食品安全责任意识。政府部门需加强监督管理,对生产企业加强技术指导。
Objective To analyze and understand the use of common additives in the local specialty of Qiqihar City,potato vermillion,and provide reference for food pollution control and technical guarantee for the development of local economy.Methods Sixty-four samples of local potato vermicelli were collected from 12 sampling sites,including markets of farm produce,bazaars,supermarkets and wholesale markets,for tests in line with the test methods in the governing national standards and evaluations based on the governing national standards of food safety.The test items include aluminum,sulfur dioxide,sodium formaldehyde sulfoxylate and urotropine.Results For the test item of aluminum,the detection rate is 100%,the content range is 19.8 mg/kg-459 mg/kg,and 7 substandard samples make a substandard rate of 10.9%.For the test item of sulfur dioxide,the detection rate is 51.6%,the content range is 0 g/kg-0.0096 g/kg,and the 33 substandard samples make a substandard rate of 51.6%.Neither sodium formaldehyde sulfoxylate nor urotropine is detected.Conclusion Abuse of food additives exists in the potato vermicelli products,one of the local specialties in Qiqihar City.It is suggested that manufacturers should strictly abide by the governing national hygiene standards of China,optimize production processes,and enhance their own legal consciousness and awareness of food safety responsibility.The relevant government departments should intensify their supervision and management and enhance technical guidance for the manufacturers.
