摘要
目的:评定月饼中菌落总数检验结果的不确定度,提高检测结果准确度。方法:按照《食品安全国家标准食品微生物学检验菌落总数测定》(GB 4789.2—2016),测定月饼中10次菌落总数,根据《测量不确定度评定与表示》(JJF1059.1—2012)对计数过程中的不确定度来源进行分析与量化。结果:B类分量对合成不确定度影响较小,A类重复测量引起的不确定度分量最大。结论:统计的A类评定测量不确定度是可行的。
Objective:To assess the uncertainty of aerobic plate count so as to improve the accuracy of test result.Methods:The detection of the aerobic plate count was performed for 10 times on the same sample according to“National Food Safety Standard Food Microbiological Examination:Aerobic Plate Count“(GB 4789.2—2016).According to”Evaluation and Expression of Uncertainty in Measurement”(JJF 1059.1—2012),the uncertainty source was detected and the uncertainty of evaluation results was determined.Results:The main part of uncertainty determination was brought by measurement repeatability occupied in aerobic plate count,and type B evaluation will be negligible.Conclusion:Type A evaluation of measurement uncertainty can be carried out for assessing the quality of moon cake.
