摘要
试验旨在评定糖果中菌落总数测量结果的不确定度,提高测定结果的可靠性。依据GB 4789.2—2022《食品安全国家标准食品微生物学检验菌落总数测定》,糖果中的菌落总数项目重复测定10次。从样品称量、取样体积、稀释倍数、重复性测定、数据修约等方面对不确定度来源进行分析,结果表明影响该方法的不确定度的主要因素是重复性测定和数据修约。
The study aims to evaluate the uncertainty of the measurement results of total bacterial count in candy and to improve the reliability of the determination results.The total bacterial count in candy is repeatedly determined 10 times according to GB 4789.2—2022 National Food Safety Standard for Microbiological Examination of Food-Determination of Total Colony Count.The sources of uncertainty are analyzed from the aspects of sample weighing,sampling volume,dilution factor,repeatability determination,and data rounding.The results show that the main factors affecting the uncertainty of this method are repeatability determination and data rounding.
