摘要
回顾了饮料酒副产物的产生来源及其主要成分,总结了国内外发酵副产物酒糟和原料副产物葡萄皮渣和苹果皮渣等的应用技术与应用成果,包括作为食品配料、作为生物炼制碳源或氮源、提取功能成分、生产有机肥等等。从国际趋势看,应用废弃物实施生物炼制和生产有机肥具有广阔的应用前景。
This paper reviews the sources and main components of by-products from alcoholic beverages,and summarizes the application technology and application results of fermentation by-products,distiller's grains,and raw material by-products grape pomace and apple pomace at home and abroad,including as food ingredients,as carbon or nitrogen source of biological refining,extracting functional components,producing organic fertilizer and so on.Judging from the international trend,the application of waste to carry out biological refining and produce organic fertilizer has broad application prospects.
