摘要
酿造废水是浓香型白酒生产过程中不可避免的,直接排放不仅会造成环境污染,还会形成资源浪费。结合目前行业研究现状,该文对浓香型白酒酿造过程中产生的蒸馏冷却水、底锅水、发酵黄水以及蒸馏尾水资源回收利用进行了分析总结,以期为浓香型白酒酿造的可持续发展提供一定的理论依据。
Brewing wastewater is unavoidable in the production process of strong-flavor(Nongxiangxing)Baijiu,and directly discharge of it will not only cause environmental pollution,but also waste resources.Based on the current research status of the industry,the recycling and utilization of distilled cooling water,bottom pot water,fermented yellow water and distilled tail water resources produced from the brewing process of strong-flavor Baijiu were analyzed and summarized,in order to provide a certain theoretical basis for sustainable development of strong-flavor Baijiu brewing.
