摘要
黄羽肉鸡肤色,尤其是黄度,作为重要性状备受关注,但测定部位、测定时间等具体指标关注少。皮肤黄度一般依靠比色卡作感官评定,色差仪测定方法则仍需深入研究,文章通过对比分析麻黄鸡屠宰前后肤色差异及相关关系,探究最佳鸡皮肤黄度测定部位及测定方法,预测活体测定结果是否具有宰后肤色黄度的代表性。利用江丰麻黄鸡共738只,采用色差仪、数码相机及人工感官评分方法测定屠宰前后不同部位肤色。结果表明,公鸡和母鸡间肤色具有极显著差异(P<0.01),屠宰前后肤色无显著相关,屠宰后各部位肤色b值呈显著相关。照片提取S值与感官评分呈极显著正相关(P<0.01)。主成分分析表明胸部、肩部和背部肤色可在一定程度上反映鸡整体肤色。研究认为利用活体肤色预测宰后肤色可能性较低,利用色差仪测定胸部、肩部和背部3个部位b值可作为描述鸡肤色黄度性状的可行方法,拍照测定效率更高,测定面积越大,代表性越好,且与人工感官评分相关,具有描述鸡肤色黄度性状方法的潜力。以上结论对开展麻黄鸡皮肤黄度遗传改良具有重要价值。
The skin color of yellow-feathered broilers is an important trait, especially its yellowness,which has been paid attention to all the time. Skin yellowness has always been evaluated manually by colorimetric cards. Although the colorimeter is recently used to detect the skin yellowness, the protocol used for profiling chicken skin yellowness is still needed to be studied. In this study the best location and method for determining the yellowness of chicken skin were explored and determined, by comparing and analyzing the difference and correlation of the skin color of Mahuang chickens before and after slaughtering. It was helpful to improve the accuracy and credibility of the determination of yellowness of chicken skin and for this trait genetic improvement. In the present study, a total of 738 Mahuang chickens(Kwangfeng Industrial Co., Ltd., Guangzhou, China) were used to measure the skin color of different parts before and after slaughtering by means of colorimeter, digital camera and manual evaluation. The results showed that the skin color between the cock and the hen was extremely significantly different(P<0.01). There was no significant correlation between the skin colors before and after slaughtering. Correlation of the skin color b values of each part after slaughtering was significant.The photo extraction S value was extremely significant correlated with manual evaluation(P<0.01).Principal component analysis showed that the skin color of the chest and shoulder could reflect the chicken to a certain extent. It was concluded that yellowness values of the chest, shoulder and dorsal with colorimeter measuring could be used as indicators of yellow skin color in chickens. The method of photographic determination was more efficient, the measuring area was larger and more representative,and the results obtained were more related to the manual evaluation, which had the potential to describe the yellowness of chicken skin color.
