摘要
分子生物学检测方法以其高效、灵敏、准确、快速的特点在食品行业真伪辨别中备受欢迎。该文主要介绍了燕窝检测中的聚合酶链式反应、实时荧光PCR、分子指纹、基因芯片、基因测序等基因检测技术研究现状,为后续燕窝真伪鉴别提供参考依据。
Molecular biology detection methods are popular in the authenticity identification of the food industry due to their high efficiency,sensitivity,accuracy and speed.This article mainly introduces the polymerase chain reaction,real-time fluorescent PCR,molecular fingerprinting,gene chip,gene sequencing and other gene detection technologies in bird's nest detection,and provides a reference for subsequent identification of edible bird nest authenticity.
