摘要
【目的】探究相同饲养管理条件下贵州瑶山鸡与长顺绿壳蛋鸡鸡蛋营养成分的差异。【方法】随机抽取43周龄瑶山鸡与长顺绿壳蛋鸡的鸡蛋各60枚,测定其常规营养成分、微量元素、脂肪酸与氨基酸的含量;对2个品种鸡蛋各营养成分进行比较,并采用氨基酸比值系数法对其营养价值进行评价。【结果】长顺绿壳蛋鸡鸡蛋中的微量元素铁和硒显著高于瑶山鸡(P<0.05);长顺绿壳蛋鸡鸡蛋中不饱和脂肪酸的含量显著高于瑶山鸡(P<0.05);长顺绿壳蛋鸡鸡蛋鲜味氨基酸中的脯氨酸显著高于瑶山鸡而丙氨酸含量显著低于瑶山鸡(P<0.05);2个品种鸡蛋各必需氨基酸含量均高于WHO/FAO推荐值,氨基酸比值系数分别高达86.04、86.36。【结论】瑶山鸡和长顺绿壳蛋鸡鸡蛋的营养价值均较高,但长顺绿壳蛋鸡鸡蛋的营养价值要优于瑶山鸡。
【Objective】To investigate the difference of nutritional components between eggs of Yaoshan chicken and Changshun green-shell chicken under the same feeding management conditions.【Method】A total of 120 eggs of Yaoshan chicken and Changshun green-shell chicken at 43 weeks of age were randomly selected to determine the contents of conventional nutrients,trace elements,fatty acids and animo acids. The nutritional components of the eggs were compared and the nutritional values in eggs of them were evaluated by utilizing the method of the ratio coefficient of animo acid.【Result】The results showed that the contents of Fe and Se in eggs of Changshun green-shell chicken were significantly higher than that in eggs of Yaoshan chicken(P<0.05). The content of the unsaturated fatty acids in eggs of Changshun green-shell chicken was significantly higher than that in eggs of Yaoshan chicken(P<0.05). The content of proline in falvor animo acids of Changshun green-shell chicken’ eggs was significantly higher than that in eggs of Yaoshan chicken while the content of alanine was significantly lower than that of Yaoshan chicken(P<0.05). The contents of essential animo acids in these 2 breeds’ eggs were all higher than that recommended by WHO/FAO and the scores of the ratio coefficient of animo acids were 86.04 and 86.36,respectively.【Conclusion】The overall results suggested that the nutritional values for eggs of Yaoshan chicken and Changshun green-shell chicken were all high but the nutritional value for eggs of Changshun green-shell chicken was superior than that of Yaoshan chicken.
