壳聚糖处理秋葵嫩荚的质地参数和品质的影响 被引量:2

摘要 近年来,秋葵的种植面积和产量不断增加,但其保鲜和加工技术却相对滞后。本研究利用质构分析仪测定了经2%,N,O-羧甲基壳聚糖溶液处理后,不同储藏时间秋葵嫩荚的质地参数和品质变化情况。结果表明:秋葵嫩荚硬度、黏着性、凝聚性、咀嚼性、回复性和TSS等参数均随储存时间的延长而显著降低,但壳聚糖处理秋葵嫩荚各参数降低的速率和幅度均显著低于对照。储存40天后,壳聚糖处理秋葵的好果率为39.46%,而对照组已经全部腐烂。壳聚糖涂膜处理能随着储存时间延长,有效降低秋葵嫩荚的品质指标和色度指标的下降幅度。综上所述,壳聚糖能延缓秋葵嫩荚的软化和腐烂,维持较高水平的质地参数和品质指标。 In recent years,although the planting area and yield of okra have been increasing,the study on fresh protection and processing technology falls behind relatively.In this study,texture parameters and quality indicator of okra treated with 2%,N,O-carboxymethyl chitosan solution during storage were determined by texture profile analysis(TPA).The results showed that the hardness,gumminess,cohesion,chewiness,resilience and TSS of okra decreased significantly with the extension of storage time.However,degree of reduction in each parameter of okra treated with chitosan were significantly lower than that of control.The good fruit rate of okra treated with chitosan was 38.45%after 40 days storage,while the control had rotted completely.Chitosan coating could effectively reduce the decreasing range of quality index and chroma index of okra tender pod with the extension of storage.In conclusion,chitosan can delay the softening and rotting of okra tender pods,and maintain their high quality and texture parameters.
