摘要 以富硒小麦幼苗、绿茶、枸杞子、菊花和三七花为材料,研制富硒麦草茶。采用观感评价及口味品尝方法,确定麦苗杀青条件与富硒麦草茶原料配比。结果表明:对小麦幼苗喷洒200 mg/L亚硒酸钠溶液,小麦生长良好,嫩绿,富硒;麦苗最佳杀青温度为90℃,用2%异抗坏血酸钠和0.6%柠檬酸护色效果最好;按60%麦苗、20%绿茶、12%枸杞子、5%菊花和3%三七花的配比制成的茶,外观和口感最好。 Using selenium-enriched wheat seedlings,green tea,barbary wolfberry fruit,chrysanthemum and notoginseng flowers as materials,the selenium-enriched wheat seedling tea was developed.The de-enzyme conditions of wheat seedlings and the raw materials proportion of selenium-enriched wheat seedling tea were determined by sensory evaluation and taste.The results showed that spraying 200 mg/L sodium selenite solution on wheat seedlings,wheat grew well,it was green and rich in selenium;the best de-enzyme temperature of wheat seedlings was 90℃,the best color protection was achieved with 2%sodium isoascorbate and 0.6%citric acid.The tea composed of 60%wheat seedlings,20%green tea,12%barbary wolfberry fruit,5%chrysanthemum and 3%notoginseng flower had the best appearance and taste.
