摘要
基于中国知网(CNKI)学术期刊数据库,以2011—2020年烹饪教育研究论文为研究对象,采用文献计量方法和知识图谱对我国近十年烹饪教育的总体态势、演进特征和前沿热点进行分析。研究发现,国内烹饪教育研究热度明显增加,但学者合作强度较低,研究机构间尚未形成紧密的合作网络;"人才培养"和"教学改革"是该阶段主要的研究热点,"现代学徒制"和"产教融合"是研究的前沿趋势。基于烹饪教育研究的发展现状,提出相关建议,以期为后续研究的开展提供参考。
Based on the academic journal database of the China National Knowledge Infrastructure(CNKI),this paper takes the research papers on culinary education from 2011 to 2020 as the research object,and uses the bibliometrics method and knowledge map to analyze the overall situation,evolution characteristics and trends of culinary education in China in the past decade.It shows that the interest of culinary education research is increasingly obvious,but the cooperation intensity of scholars is low,and there is no close cooperation network among research institutions."Talent training"and"teaching reform"are the main research hot spots,and"modern apprenticeship"and"integration of production and education"are the research frontiers.Based on the status quo of culinary education research,this paper puts forward relevant suggestions in order to provide reference for the follow-up research.
