摘要 以树莓为研究对象,采用热风干燥技术,研究热风温度、热风速度、物料加载量对树莓热风干燥特性的影响,并建立动力学模型。研究结果表明:树莓热风干燥过程主要分为增速和降速两个干燥阶段,没有发现明显的恒速干燥阶段。树莓热风干燥过程水分有效扩散系数为1.88×10^(-7)~3.02×10^(-7) m^(2)·min^(-1)。通过拟合4种常用动力学模型,表明Weibull distribution模型能够较好地反映热风干燥过程中树莓水分比随干燥参数的变化规律,对应的R2,χ^(2)和RMSE,分别为0.99963、0.00005和0.00699。相同干燥条件下的实验值和预测值拟合度较好,表明Weibull distribution模型适宜于描述和预测树莓热风干燥过程的水分变化规律。 The effects of hot air temperature,hot air velocity and loading quantity on drying characteristics of raspberry were investigated by using hot air drying technique.Meanwhile,the model for describing the drying kinetics was established through nonlinear fitting.The results showed that the drying process was mainly divided into two periods of accelerating rate and falling rate,there was no obvious constant-speed period.The effective moisture diffusion coefficients,ranging from 1.88×10^(-7) to 3.02×10^(-7) m^(2)·min^(-1).According to the nonlinear fitting for four kinetic models,Weibull distribution could well be used to reflect the variation of raspberry moisture ratio with the drying factors during the drying process,and its values of R2,χ^(2) and RMSE were 0.99963,0.00005 and 0.00699,respectively.The predicted values from this model were nearly consistent with the experimental values at same experimental conditions.Therefore,the model could be used to predict the moisture change of raspberry during the drying process.
