摘要
研究不同草菇栽培料含水量对草菇采后保鲜的影响,从栽培料水分的角度,为研究草菇采前保鲜提供理论依据。采用生产草菇常用原材料(废棉90%和棉籽10%),设置培养料高水分(73%)和低水分(63%) 2个梯度栽培草菇。将草菇采后置于温度15℃,湿度55%的环境中贮藏,结合表型和质地多面分析法,研究栽培料水分高低对草菇采后贮藏的影响。结果表明,随着贮藏时间的延长,不同水分培养料栽培的草菇硬度、韧性、咀嚼性、胶着性均呈现上升趋势,回复性均呈先上升、后下降趋势,但贮藏相同时间,高含水培养料栽培的草菇保鲜效果较好。综合试验结果,高水分栽培料栽培草菇可延长其贮藏期。
The effect of moisture content of different cultivated materials on the postharvest fresh-keeping of Volvariella volvacea was studied. V. volvacea was cultivated with 90% waste cotton and 10% cottonseed, which were common raw materials for the production of V. volvacea. The V. volvacea was cultivated in two gradients of high moisture(73%) and low moisture(63%).The two cultivated V. volvacea were stored in the environment of 15℃ and 55% humidity. Combined with phenotypic and texture multi-faceted analysis, the effect of water content on the postharvest storage of V. volvacea was studied. The results showed that with the extension of storage time, the hardness, fracturability, chewiness and gumminess of V. volvacea cultivated with different water culture media showed an upward trend, while the resilience showed a trend of first rising and then decreasing.Moreover, the fresh-keeping effect of V. volvacea cultivated with high water content nutrient was better than that with high water content culture for the same storage time. The results showed that the storage period of V. volvacea could be prolonged by high moisture cultivation formula.
