摘要
黑小麦营养价值高,除富含基本营养成分外,还富含多种活性成分,这些活性成分具有多种生理保健功能,以黑小麦为原料,可开发出多种功能性食品。本文综述了黑小麦活性成分的提取、测定、功能及功能性食品开发的研究进展。
The nutritional value of Triticale is high. It is rich in basic nutrients, and is rich in many active ingredients. These active ingredients have many physiological functions. Many kinds of functional foods can be developed from triticale. The paper summarizes the research progress of extraction, determination, function and functional food development of active ingredients from black wheat.
