摘要
为了解特殊粒色小麦不同品种中金属元素的含量水平,为其营养价值和功能性特色食品的开发利用提供科学依据,选用南阳灰色、普通颗粒紫麦、硬质紫麦和蓝麦为材料,用微波加热技术在家用微波炉内压力快速消解样品,依据国家颁布的标准和原子吸收分光光度法(AA S)测定了上述样品中的Zn、F e、Cu、M n、Co、C r、K、C a、M g和Pb等10种金属元素的含量,并与文献报道的普通小麦相比较,结果表明:南阳特殊粒色小麦中的K、F e、M n、M g的含量远远高于普通小麦,C a和Cu的含量与普通小麦相差不显著,Zn的含量显著低于普通小麦,而Pb的含量低于国家现行铅限量卫生标准。因此,可以根据其特点开发具有不同功能的特色食品,满足不同人群日益增长的健康生活的需求。
To find out the content level of metal elements in different varieties of special color wheat and afford a scientific evidence to the exploitation and the ultilization of their nutrition value and the functional food. Selecting Nanyang grey wheat, common granule violet wheat, violet hard-wheat and blue wheat as the material, using microwave heating technology to digest the samples in microwave furnace, the content of Zn, Fe, Cu, Mn, Co, Cr, K, Ca, Mg and Pb in special color wheat were determined by the national standard methods and AAS. Comparing special color wheat with common wheat reported on literatures, the results showed that content of K, Mg, Fe and Mn in Nanyang special color wheat was further higher than that in common wheat, the content discrepancy of Ca and Cu was indistinctive, but the content of Zn in special color wheat was obviously lower than that in common wheat, the content of Pb was lower than the limited content of Pb in national standard. According to the results, all kinds of functional foodstuff could be exploited to satisfy the increasing need of healthy life for different people.
