摘要
五常稻花香米粒形长、食味好,是粳型稻米中的名优精品,是少数具有地理保护标志的稻米品种之一,是典型的小产地品种,但产量低,成品米率低,年度出米率波动大,其加工方法,与短圆粒粳米相比有很大差异,加工难点较多。通过对烘干、清理、砻谷、选糙、碾磨、分级、抛光、色选工艺的改进,取得了较好的加工成效,可为较难加工的高端长粒形优质粳米、南方优质籼米加工提供参考。
Wuchangdaohuaxiang rice had long grain shape and good eating taste.It was one of the bestknown Japonica rice varieties with geographical protection marks.As a typical variety from small planting area,hadlow yields.Annual milled rice ratefluctuated greatly.Compared with short round-grained japonica rice,its processing method was very different and also had many difficulties.By improving the technology of drying,cleaning,husking,milling,grading,polishing and color sorting,better processing results were obtained,which could provide reference for the processing of high quality japonica rice with long grain shape and high quality indica rice in southern China.
