远志橙皮复合饮料研制及抗运动性疲劳作用研究 被引量:5

Study on Preparation and Resistant Exercise Fatigue of Compound Beverage of Polygala Tenuifolia Willd.and Flavedo

摘要 以远志多糖和橙皮苷为原料,研制远志橙皮复合饮料,并考察其抗运动性疲劳作用。采用单因素实验与响应面设计优化该饮料的最佳组分配比,同时利用动物实验观察其体内活性。实验结果表明,该复合饮料的最佳配方为:远志多糖与橙皮苷的溶液体积比1:1、蔗糖用量4.5%、柠檬酸用量0.25%、羧甲基纤维素钠用量0.41%,制得的饮料浅黄透亮、色泽均匀,混有远志与橙皮香味,酸甜适中,且静置后未有明显沉淀与分层,感官评分(88.53±0.64)分。动物实验结果表明:与空白对照组相较,不同剂量的该复合饮料均可明显延长大鼠的游泳力竭时间(P<0.05或P<0.01),加快运动时体内乳酸代谢(P<0.01),并显著减少尿素氮的生成(P<0.01)。远志橙皮复合饮料具有较好的抗运动性疲劳功效。 The Polygala tenuifolia Willd.-flavedo compound beverage was developed with polysaccharides of Polygala tenuifolia Willd.and aurantiamarin as raw materials,moreover investigated its activity of resistant exercise fatigue.The perfect component proportion of compound beverage was optimized by single factor experiment and response surface methodology.Meanwhile,its resistant exercise fatigue activity in vivo was observed by animal experiments.The optimum parameters were that the volume ratio of polysaccharide extract and aurantiamarin was 1:1,saccharose content was 4.5%,citric acid content was 0.25%,and sodium carboxymethyl cellulose content was 0.41%.The beverage presented a light yellow color and transparent with the proper acidity and sweet,without obvious precipitation or stratification in storage,had special taste and it maintained the natural flavor and nutrition of Polygala tenuifolia Willd.and flavedo.The sensory evaluation score of the beverage was 88.53±0.64.Compared with the blank control group,the beverage groups at all doses significantly prolonged weight-loaded swimming time of rat (P<0.05 or P<0.01),accelerated metabolism of lactic acid (P<0.01),and decreased creation of urea nitrogen in serum after exercise (P<0.01).The compound beverage has better function of resistant exercise fatigue.
