壳聚糖处理对冷藏枸杞品质的影响 被引量:3

摘要 以‘宁杞七号’枸杞为研究对象,选用浓度为1.00%、1.25%、1.50%的壳聚糖溶液浸泡鲜果60 s,以不含壳聚糖的相同溶液浸泡同等时间为对照,自然晾干后,置于(3.0±0.5)℃冷库中贮藏。定期测定色泽、果形指数、呼吸强度等相关指标。结果表明,与对照组相比,壳聚糖处理有利于保持枸杞鲜果的色泽、果形指数和可溶性固形物含量;1.25%壳聚糖处理可显著抑制鲜果贮藏期间可滴定酸、抗坏血酸和可溶性糖含量的下降速度(P<0.05);1.25%壳聚糖处理效果较佳。 Lycium barbarum fruits‘Ningqi No.7’were used in this experiment.The fruits were soaked in chitosan solution of 1.00%,1.25%and 1.50%for 60 seconds,and the control was soaked in 1.00%acetic acid solution without chitosan for the same time.After natural drying,the Lycium barbarum was stored in(3.0±0.5)℃cold storage.The quality indexes such as color,fruit shape index and respiratory intensity were measured at regular intervals.The results showed that chitosan treatments were beneficial to maintain the color,fruit shape index and soluble solid content of fresh fruit of Lycium barbarum.Treatment with 1.25%chitosan significantly inhibited the decrease rate of titrable acid,ascorbic acid and soluble sugar content in fresh fruit during storage(P<0.05).So 1.25%chitosan had better treatment effect.
